The "Yunagi" course begins with a platter of three appetizers of the day, followed by a prosciutto salad with organic vegetables caught that morning and a three-piece platter of seasonal fresh sashimi. It includes lean horse meat sashimi from Kumamoto Prefecture and crispy, freshly fried Kitaakari fries from Hokkaido. This satisfying course ends with a choice of main dish: teppanyaki teriyaki made with free-range chicken from Kagoshima Prefecture, eel rice, and a hot pot of free-range Daisen chicken!
